On this day in 1925, S’mores were announced as a new dish at Camp Andree (national Girl Scout Camp). Originally called the Graham Cracker Sandwich, S’more was adopted as a contraction of “some more.”
Combine the creamcheese, corn, pepperjackcheese, sourcream, Tajin or chipotleseasoning, and chopped cilantro in a large mixing bowl. Mix until well combined.
Cooking Methods:
Crockpot Method: Transfer the mixture to a crockpot and cook on low for 2 to 2.5 hours, stirring halfway through cooking.
Oven Method: Transfer the mixture to an oven-safe dish and bake for 2 to 2.5 hours, stirring halfway through baking.
Once done cooking, sprinkle more Tajin or chipotle seasoning on top.
Optional: top with crumbly cheese, such as feta or goat cheese.
Serve the street corn dip warm with tortilla chips or your preferred dippers.

Ingredients
2 slices of day-old white bread, crumbled
½ cup heavy cream
1 teaspoon butter
1 small onion, minced
⅔ pound ground beef
⅓ pound finely ground pork
1 egg
1 tablespoon brown sugar (Optional)
1 teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
⅛ teaspoon ground ginger (Optional)
1 tablespoon butter
¼ cup chicken broth
3 tablespoons all-purpose flour, or as needed
2 cups beef broth, or as needed
½ (8 ounces) container of sour cream

Directions
Place breadcrumbs into a small bowl; mix in cream. Allow to stand until crumbs absorb cream, about 10 minutes.
Meanwhile, melt 1 teaspoon butter in a skillet over medium heat; cook and stir onion until light brown, about 10 minutes. Transfer onion to a mixing bowl.
Mix groundbeef, groundpork, egg, brownsugar, salt, blackpepper, nutmeg, allspice, and ginger with onion in the mixing bowl. Lightly mix in breadcrumbs and cream.
Melt 1 tablespoon butter in a large skillet over medium heat. Pinch off about 1 1/2 tablespoons of meat mixture per meatball; form into balls.
Place meatballs into the skillet and cook, turning often, until browned, about 5 minutes. The insides of meatballs will still be pink.
Place browned meatballs into a baking dish, pour in chickenbroth, and cover with foil.
Bake in the preheated oven until meatballs are tender, about 40 minutes. Remove meatballs to a serving dish.
Pour pan drippings into a saucepan over medium heat. Whisk flour into drippings until smooth.
Gradually whisk in enough beefbroth to total about 2 1/2 cups liquid.
Bring gravy to a simmer, whisking constantly, until thickened, about 5 minutes.
Just before serving, whisk in sourcream. Season with salt and black pepper. Serve gravy with meatballs.

Serve Swedish meatballs with mashed potatoes, pickles, and Lingonberries (can be substituted for cranberry sauce) traditionally
1 (12- to 14-ounce) package of cocktail-sized smoked sausages or little smokies
1 (8-ounce) can refrigerated crescent roll dough
Flaky salt or everything bagel spice, for sprinkling (optional)

Directions
Arrange a rack in the middle of the oven and heat the oven to 375ºF. Prepare a baking sheet with parchment paper.
Whisk together an egg and the water in a small bowl until combined.
Pat the sausages or little smokies dry with paper towels.
Unroll the crescentroll dough on a work surface. Separate the dough along the perforated seams into 8 triangles.
Use a pizza cutter or sharp knife to cut each triangle lengthwise into 3 narrow triangles.
Place 1 sausage at the wide end of a dough triangle. Roll towards the pointed end, wrapping the dough around the sausage and allowing the dough to overlap.
Place all of the rolled pigs in a blanket on the prepared baking sheet with some space in between each.
Brush the tops and sides of the dough with a thin layer of egg wash and top with flaky salt or everything bagel spice (if desired).
Bake until the dough is puffed and golden brown which will take approximately 13 to 15 minutes.
Serve warm with mustard, ketchup, or your favorite dipping sauce. Enjoy!

1 1/2 cups granulated sugar
1/2 cup water
6 eggs, separated
1/2 tsp cream of tartar
1 1/2 cups cake flour, sifted
1 tsp vanilla extract
Powdered confectioners’ sugar (for dusting)
Lemon Filling
3/4 cup granulated sugar
3/4 cup water
3 tbsp cornstarch
1 tbsp butter
1/4 tsp salt
1/3 cup lemon juice
2 tbsp grated lemon rind

Lemon Puffs
In a saucepan, combine the granulated sugar and water. Boil the mixture until it spins a long thread when a spoon is lifted from the syrup.
In a mixing bowl, beat the eggwhites until stiff peaks form. Gradually pour the hot syrup over the stiffly beaten egg whites, beating constantly until the mixture cools.
Stir in the well-beaten egg yolks and vanillaextract.
Gently fold in the sifted cakeflour combined with creamoftartar.
Drop the batter by teaspoons onto parchment paper and place it on a cookie sheet.
Sprinkle with powdered confectioners’ sugar.
Bake in a preheated oven at 350°F (175°C) for 10-12 minutes or until lightly golden.
Lemon Filling
In a saucepan, mix the sugar, cornstarch, and salt. Gradually add the water, stirring until smooth.
Bring the mixture to a boil, stirring constantly, and boil for 1 minute.
Remove from heat and stir in the butter and grated lemonrind.
Gradually add the lemon juice, stirring until the filling is well combined and smooth.
Allow the filling to cool slightly before using.

Assembling Lemon Puffs:
Once the puffs are baked and cooled, spread a generous amount of lemon filling on the flat side of one puff and top with another, sandwiching the filling between them.
Dust with powdered confectioners’ sugar before serving.

Ingredients
4-6 chicken pieces
Salt and pepper to taste
Margarine (for greasing the dish and dotting the chicken)
Dressing:
Equal parts cornbread and stale biscuit or loaf bread (crumbled)
1 small onion, finely chopped
About 2 tablespoons sage
1/2 cup oil
2 eggs
1 can chicken broth
Directions
Preheat the oven to 350°F (175°C).
Generously grease an oblong Pyrex dish with margarine.
Lay the chicken pieces (thighs, drumsticks, or breasts) in the dish, and season with salt and pepper. Dot with margarine.
In a large bowl, prepare the dressing by mixing the crumbled cornbread, stale biscuit or loaf bread, finely chopped onion, sage, oil, and eggs.
Gradually add the chickenbroth to the dressing mixture, mixing well until the desired consistency is reached. The dressing should be moist but not soggy.
Spread the dressing over the chicken pieces, covering them completely.
Cover the dish tightly with foil.
Bake in the preheated oven for 2 hours, or until the chicken is fully cooked and tender.
Serve the baked chicken hot with your choice of side.
